I don't think that a reshuffle of the connection list can be a good idea or have any meaning.
While I think that keeping a sorting order, any sorting order, is.
If you has a list sorted in a certain manner, just keep it.

The priority number is for another purpose, the priority in running the
connection attempts.

The display sort order is something different.
Usually, for cabled connections you want to use either a lexicographical ordering or a time-based one (latest to earliest, usually).
For wireless you either want a lexicographical ordering or one based on the signal strength.
Again, I am talking about the display, not the use. We have priority index for that.
