FYI I did create a VM with 3 Ubuntu installs on it and it still offered
a an auto-resize option so that's not it.

Will try putting together a VM with a Windows 10 install and an Ubuntu
install. Maybe that will replicate it. I have an inclination GPT is the
issue.
