Very curious.

Let's try something:

kdesudo kate /etc/default/grub.d/50-kubuntu.cfg

delete the second line reading 'set -e' and save

then run

sudo update-grub

check if /boot/grub/grub.cfg contains '  set lang=es_ES' now
