with a bit of further testing:

The Ambiance theme seems to have the problem at application startup.  If
I change the theme and then change back to Ambiance it is ok.   Of the
other themes High Contrast Inverse, High Contrast Large Print Inverse
and Radiance seem to have the same problem.  On application startup a
black box is displayed, changing to the theme after startup works, white
text appears in the box, but not at startup.  The other themes available
in Appearance Preferences are ok (mainly because they have dark text in
a light box rather than vice-versa.

Ubuntu 10.10 updated as of a few minutes ago.
