Apparently you can't change xpdf settings from the GUI. You need to edit $HOME/.xpdfrc.
See "man xpdfrc" or <http://www.fifi.org/cgi-bin/man2html/usr/share/man/man5/xpdfrc.5.gz>

(I gave up using Ubuntu KDE flavor and went upstream because of small
things like this bug).
