Ubuntu custom image build toolchain

Hi all,
We'd like to build a custom Ubuntu 18.04.2 ISO installation image with our patched kernel to verify the hardware.
Is there any guide on the toolchains to build an ISO just like the official ISOs?

Note: the patched kernel is already verified via modprobe and further via deb install, but the ISO verification is required by one of our partners.
