So I've added "noapic nolapic" to my kernel boot configuration and this apparently solved the issue.

during a cumulated time of around 25 work days, the 2 machines I migrated have not experienced the problem.

I've been told that noapic nolapic on a uniprocessor don't change functionality much. I've used this trick in several cases already. There clearly is an issue, but I don't have time to investigate it today. If someone on the other side makes a patch, I could test it.
