I just ran into this same behavior ("installed grub-efi-amd64-signed
package post-installation script subprocess returned error exit status
32").  For me the problem was my /boot/efi partition didn't have the esp
flag set.  For some reason this resulted in it trying to mount to a
different partition on the same disk.
https://askubuntu.com/a/1276122/1707000 describes the problem and the
solution.  Once I set it, a dconf menu came up during installation
asking me to confirm where to install the bootloader, and the only
option was the correct /boot/efi partition.  I've unfortunately lost the
output from when it was failing, but hopefully unsetting the esp flag
can at least provide a repro case.
