Thank you for your bug report.

It seems that your /boot/grub/grubenv file is corrupted. This can happen
if you reset the system during a write to it, or if there's a failing
drive.

Looking at your dmesg log, it is indeed a drive failure. Half the log
file is drive failures in fact, both reads and writes. With lots of data
link resets.

Please urgently back up your files if you haven't, check if the issue is
perhaps due to lose cables, and if not, please get a new drive and
install there.
