If you want to quickly change an ISO to prevent the installer from offering
it you can remove the source Catalog entry variation (sorry about the
terminology) that has the snapd_system_label pointing at the model that
enables encryption. That doesn't sound much harder than adding a command
line flag?

  [FDE] Add a switch to hide the FDE option

Status in subiquity package in Ubuntu:
  New

Bug description:
  For the release of 23.10, we want to merge the canary image into the
  regular Ubuntu Desktop image and possibly propose FDE to everyone.
  However, we want to keep the possibility of quickly hiding the FDE
  option without changing the code.

  For this purpose, we'd like to add a switch to turn it on or off. It
  can be a kernel boot command such as "show-fde" (or propose something
  else but "enable-fde" could be confusing because it could mean that
  the user wants to install with FDE)

  If this switch is there, the installer displays the FDE option.
