I am using LVM for my root filesystem, but /boot is on a separate partition. After copying all of the data across, fixing /etc/fstab and rebooting, I typed the UUID of the new disk in to grub manually. The system booted perfectly fine but when I ran update-grub I got:

/usr/sbin/grub-probe: error: Couldn't find PV pv0. Check your device.map.
Making /boot/grub/device.map (it did not exist) and filling in an entry for my root filesystem "fixed" the problem.
