Thank you Phillip!  I eventually worked this out and created an EFI
system partition ... and this worked like a dream!

  Grub will not install during installation of Ubuntu

Status in grub-installer package in Ubuntu:
  Invalid

Bug description:
  Grub fail to install during standard install of Ubuntu. I had
  installed Linux Mint 19 on my old MacBook Pro, but changed my mind and
  decided to install Ubuntu 18.04. During install I got errors saying it
  could not mount sda1 and finally at the end of install it Grub would
  not install.  I tried again this time creating my own partitions sda1/
  sda1/boot and sda1/home.  This time it did not complain about mounting
  sda1 ... but still failed to install Grub.
