I am on Ubuntu 17.10
The error occurred when I installed available updates with aptitude.
This is the relevant log snippet:
Setting up grub-efi-amd64-signed (1.85.1+2.02~beta3-4ubuntu7.1) ...
Installing for x86_64-efi platform.
grub-install: error: cannot find EFI directory.
dpkg: error processing package grub-efi-amd64-signed (--configure):

My EFI partition is not mounted anywhere by default. I then mounted it manually:
> sudo mount /dev/nvme0n1p1 /boot/efi
Then retried installation:
> sudo apt install package grub-efi-amd64-signed
[...]
Setting up grub-efi-amd64-signed (1.85.1+2.02~beta3-4ubuntu7.1) ...
Installing for x86_64-efi platform.
Installation finished. No error reported.
W: APT had planned for dpkg to do more than it reported back (0 vs 4).
Affected packages: grub-efi-amd64-signed:amd64
That seemed to have worked but because of the warning at the end I reconfigured:
> sudo dpkg-reconfigure grub-efi-amd64-signed
Installing for x86_64-efi platform.
Installation finished. No error reported.
Seems to be ok now.
So if the installation script could automatically mount the EFI
partition then it should work.
