I think it fails to install the grub, from the UbiquitySyslog.txt attached:

I've tried this on my pc and it goes straight through with no errors.
Specifically :
dpkg: warning: ignoring request to remove grub-pc-bin which isn't installed
dpkg: warning: ignoring request to remove grub-pc which isn't installed
dpkg: warning: ignoring request to remove grub-gfxpayload-list which isn't installed
which are the packages giving errors in your case.
