Did you follow some howto when turning off secureboot?  Is it possible this
howto instructed you to run commands that might have changed your
/etc/fstab?

It looks like this did re-add /boot/efi back to the /etc/fstab, so
unfortunately that removes any forensics we might have used to understand
how the system got into its previous state.

It looks like you already have.

If you have any insight into how /boot/efi disappeared from /etc/fstab, we
would chase that down.  Otherwise there's probably nothing more that we can
do on this bug.
