Your log shows that you had a functioning, installed system using the
BIOS version of grub (grub-pc 2.02~beta2-36ubuntu3); then you
subsequently installed grub-efi-amd64-signed and shim-signed, which are
packages specific to the UEFI version of grub.  Why did you install
these packages?
