I also tried manually installing grub with grub-install, here's the output of that:

  Ubiquity crashed (twice separately) when trying to install GRUB to

Status in grub-installer package in Ubuntu:
  Incomplete

Bug description:
  Ubiquity installer first said that the bootloader (which was set to
  install to a USB flash drive, /dev/sdc) was unable to install, then
  immediately after I closed the error dialog, the installer crashed.

  This happened twice in a row, on separate boots.
