I think that there are two values swapped in your grub configuration and
believe that if you switch GRUB_HIDDEN_TIMEOUT=10 and GRUB_TIMEOUT=0,
and then run 'sudo update-grub', on the next boot you'll have 10 seconds
to press shift so that the grub menu is displayed.
I'll follow up with Colin about that.
