[Bug 1197220] [NEW] replace "Ubuntu" with ${RELEASE} entirely

Public bug reported:

some palce in ubiquity, use ${RELEASE}, but in text "Encrypt the new
Ubuntu installation for security", it use "Ubuntu", it also should be
replace by ${RELEASE}, so that different flavours can show their name
entirely
