Maybe there could be 2 buttons, 
"Restart" and "Do not restart".

The "Do not restart" button is gray and disabled at first and only becomes clickable if you
enable a checkbox "I know my risk about not restarting, I really want to restart later" with a link explaining what Matthew wrote (No security until restarted)

  In Progress

Bug description:
  The latest updates to "software updater" in 12.10 has only given one
  option in the pop up after installing updates and that is to restart,
  where is my restart later or close option?

  This is a big usability bug!
