One must have "/boot" unecrypted (something like 200MB ext4 should be plenty).
The fact that manual partitioning is allowing you to start installation is worrying as the underlying partman has safety check to check that there is a /boot setup, when required.

Title:
Encrypted installation crashes . Failed to mount the target: /target

Status in “ubiquity” package in Ubuntu:
  Confirmed

Bug description:
The installation of a dm-crypted system with a partition setup as
below crashes when installing in VBox as on a Dell Latitude E4300.

  unencrpyted:
  250 MB ext4 as /boot
  encrypted:
  12 GB btrfs as /
  8 GB as SWAP
  80 GB as /home
  unencrypted:
  150 GB ext4

Seems as the installer is crashing when trying to do the partitioning
in the background (shortly after choice of location).
