Would you be able to create an image of the filesystem after windows has
repaired it, but before trying to install ubuntu again, and then verify
that trying to install once again corrupts the filesystem?

If /dev/sda1 is your EFI system partition, you can create an image of it
with this command:

sudo dd if=/dev/sda1 | bzip2 -c > esp.bz2

Then attach the esp.bz2 file to this bug report.
