Part of the problem was fixed a few minutes ago in ubiquity's trunk branch, there might be more I missed though.
I'll be doing some persistent testing with Italian now and see if I missed something in my fix.

Title:
wrong layout switcher in live session - default english layout is
"Cameroon"
Status in “ubiquity” package in Ubuntu:
Confirmed
Status in “ubiquity” source package in Precise:
Confirmed
Bug description:
Hello
Testing today's build on a usb key with persistence never used, I can observe that when ubiquity-dm appear we have two keyboard icons in the top bar and independently from the selected language, it still selected in En Cameroun (cm).
Selecting italian as language and 'Prova Ubuntu' (try Ubuntu) when the session start it is in italian, but the layout is not English and not italian, seems like they are mixed, so I cannot find a way to type @.
Clicking Reset to Defaults, Appear only the Italian layout and the keyboard is now fully working.
Thanks
Fabio
