This is because these two variables are not exported, as expected.
Patching /usr/sbin/grub-mkconfig with
248c248,250
< GRUB_BADRAM

> GRUB_BADRAM \
> GRUB_COLOR_NORMAL \
> GRUB_COLOR_HIGHLIGHT
fixes this bug.
