Actually Is impossible to have everythings translated staying in the cd size, that is our limit for an ISO image.
That is the cause why you see just few things translated in italian.
When the 12.04 will be released all the italian language packs will be downloaded during the installation and the first boot of the system.

Bug description:
  Test Case ID: TC-DLS-001
  I choose to try ubuntu in italian, but, when the live session starts, I have the english language. The keyboard is set in italian. LibreOffice and Firefox are in english too.
  When I execute the test pressing  a key at startup and choose italian, I have the same problem, but the caption of the icon "Install Ubuntu 12.04" is in italian.
