This appears to be fixed in ubiquity 2.7.15. I'm performing a bit of
testing now and I posted a comparative screenshot at the forums:

IMHO that looks great, many thanks.

Title:
Ubiquity installer is difficult to read on "Allocate Drive Space"

Status in “ubiquity” package in Ubuntu:
  Triaged

Bug description:
  Binary package hint: ubiquity

Natty Narwhal desktop images dated 2011-03-26 use very light text for
  explanations.

Both Ubuntu and Xubuntu desktop images, amd64 and i386, have this
issue. When installing, on the first "Allocate Drive Space" page of
the installer, the explanations are in a color matching the
  background.

Clearly visible on this page are the following options:

  Install alongside them

  Erase disk and install
  Warning:

  Something else

There are explanations for each of these in text matching the
background, making them very hard to actually see and read. Since
partitioning can destroy what is already on the hard drive, these
explanations should be very visible to the user, so they select the
  correct options.
