I have also installed Edubuntu 12.04 but under an LTSP scheme and I do not
have the Unity desktop. By default I have a classic Gnome desktop with
menus.
maybe you have to look at the different possible choices that are offered
at the moment of installation to get this setup.
BTW with Unity and the Dash you can filter applications by categories and
you certainly have a actegory for educational software under Edubuntu.
