Here's the final final script:

#!/bin/bash
if [ ! -d "$HOME/.config/chromium" ]; then
  # do this if profile doesn't exist
  mkdir ~/.config/chromium.orig
  cp -R /opt/tcs/chrome/profile/chromium/* ~/.config/chromium.orig
  chown -R $USER:$USER ~/.config/chromium.orig
else
  mv ~/.config/chromium ~/.config/chromium.orig
fi
mkdir /tmp/.config-chromium
ln -sf /tmp/.config-chromium ~/.config/chromium
ln -sf ~/.config/chromium.orig/Default /tmp/.config-chromium/Default
chromium-browser

...where /opt/tcs/chrome/profile/chromium/ is the location of the template
profile
