LTSP help...can we change it from Gnome to Xfce?

On the server side, make all users or certain users (those who will
access from clients) use default desktop XFCE. That can be set using GDM
setup (iirc).

Or, make a .xsession file under /home/ that has this line

exec xfce4-session
