To be considered for Edubuntu Dapper:

(...) tools that allow users to create educational material in a
collaborative way, adding some extra functionality to this process, like
version control system of the documents, automatic conversions to
several formats (html, pdf, ps, ...) or different ways of editing and
updating the documents: with an editor, via a web form,

(...) at the moment these base formats are Docbook and Latex. These
documents are stored in a version control system (subversion at the
moment) that allow the users to have available the history of every
document. And every document is converted to several formats
automatically (html, pdf, ps, text, ...).

These documents can be created in a collaborative way between different
people, and different ways are provided to modify and update these
documents. But much more functionality is being implemented, and some
integration with a LCMS (Learning Content Management system) is done now
with moodle.

They have Debian packages available.
