It's Evolution 2.8.0-0ubuntu1.

As far as I know, I did not activate any option.

When the entry has focus, it's blank here too.  If I choose an option
from the dropdown menu that can be reached via the icon in the left part
of the entry, the entry gets focused and thus there's no background
text.  But if I focus something else, for example click on an email
message, the focus shifts away from the entry and the background text
appears.

Also, the background text mimics the choice made in the what-to-search
dropdown box.  So if you choose "Recipients contains" and make sure the
entry doesn't have focus, the background text will be "Recipients
contains".  The problematic options is "Subject or Sender contains"
since it's a few pixels too wide.
