I think the knob wasn't working because apparently I misconfigured some GNOME shortcuts.  Now I see that the headset sends simple input events which probably look like multimedia keypresses on the keyboard. In that case it might not be easy to pinpoint the source of the keypress, however, the problem still remains.

 I think this could be related to the problem that the sound applet does not notice that the default audio device has changed. I think these are related:
