hmm, usually this codesnippet from postrm should remove the symlink

if [ -L /usr/share/gconf/defaults/20-edubuntu ]; then
    rm /usr/share/gconf/defaults/20-edubuntu
fi

which version of edubuntu-artwork do/did you have installed ?
