Good shot! Once gstreamer0.8-mad is installed all is ok - either when it is
alone or together with gstreamer0.8-ffmpeg.
When only the gstreamer0.8-ffmpeg is installed the described bug applies.
When neither is present, mp3s don't play at all.
But how was I supposed to guess this alone? There are plenty of different
gstreamer and other multimedia related packages in Ubuntu.
Shouldn't Rhythmbox depend on gstreamer0.8-mad by default for the user's sake?
