The file /usr/share/applications/gksu.desktop has the following line:
Icon=/usr/share/pixmaps/gksu-root-terminal.jpg

This is wrong, because if a theme has an icon to replace it, this change will
have no effect.

Instead, if the line was only
Icon=gksu-root-terminal
(note the lack of file extension)

it will work as always, but it would leave the possibility of changing the icon
according to the theme, thus making all-vector  icon themes with a much better look.
