[doc][patch] more analysis of commit and uncommit

Here is some more performance analysis of commit and uncommit.
They're still pretty patchy, but Robert asked that I put them up
anyhow, so here they are.  Anyhow if I wait Ian will probably have
totally finished off commit already!

They're a bit rambling because, as it says at the start, we probably
need to analyse two things about commit: how to clean it up to make
later changes easier, and also what an ideal commit would look like.
