The time it takes to build a working tree after the branch data has been
updated.

merge time, broken down into:

1) merge change to 1 file in large tree
2) merge change to many files in large tree

I would also like to see versions of status, commit, et al that work
against a small subset, or even a single file, versus the whole tree.

We don't have a 'diff' test.

If you want lower level tests, the time it takes to extract X number of
texts from a Knit file with Y versions. This is mostly tested at higher
levels, though, so it may not be worth a direct test.
