You can disable the ones you don't want, after installation.

You can enable the autohinter in your local configuration; it would be
unwise to change the defaults at this late stage of the release.

This is intentional.

You should install the mplayer-686, mplayer-k7, etc. package as appropriate
for your CPU, not mplayer-custom.
(mplayer-custom shouldn't even be there)

I don't think it is possible to use Rosetta to translate the installer yet,
but you can ask on the rosetta mailing list or IRC channel.
