That's perfectly right.
You can also add the PPA on the server so you get the new
ltsp-build-client. So you'd have to add the PPA to you server's
/etc/apt/sources.list, then apt-get update + apt-get upgrade, then
chroot into the LTSP image, do the same and then ltsp-update-image.
